| 1 | each | Mdm onion, chopped |
| ½ | each | Green pepper, chopped |
| 16 | ounces | Can tomatoes |
| 2 | cups | Water |
| Salt and pepper | ||
| Rice | ||
| Brown sausage. Drain well. | ||
Directions

In a Dutch oven, combine oil and flour and stir constantly over low heat until you have a deep rich colored roux. Add onions and green pepper and saute a few minutes, until tender. Add sausage, tomatoes, water, salt, and pepper. Cover and simmer at least 1 hour. Serve over rice. Serves 4-6
