Piquant tomato sauce

Yield: 4 servings

Measure Ingredient
2 tablespoons Olive oil
3 \N Garlic cloves; chopped finely
1 small Red pepper; de-seeded and
\N \N ; chopped finely
8 \N Ripe tomatoes; skinned and
\N \N ; chopped, or 11/2 x
\N \N ; 397g (14oz) can of
\N \N ; chopped tomatoes,
\N \N ; up to 10
1 teaspoon Dried oregano
\N \N Chilli powder; to taste
\N \N Salt

1. Heat the olive oil in a saucepan, add the garlic and red pepper and fry for about 5 minutes or until softened.

2. Add the tomatoes and oregano, season with salt and add chilli powder to taste.

3. Simmer, uncovered, for a further 15 minutes, or until the sauce has thickened.
