Sara's cajun fish fillets

Yield: 4 servings

Measure Ingredient
4 \N White fish fillets - (6 oz ea); such as
\N \N Lemon sole
\N \N Milk; for soaking
4 tablespoons Olive oil
\N \N Flour for dredging; seasoned with
\N \N Cayenne pepper; paprika, dried thyme,
\N \N White and black pepper; and salt

In a shallow baking dish, soak the fish in milk for about 10 minutes. In a heavy saute pan heat the olive oil over medium-high heat until it is hot but not smoking. Remove the fish from the milk and dredge it in the seasoned flour. Saute the fish for 2 to 3 minutes on each side, or until it just flakes. Serve immediately. This recipe yields 4 servings.
