Santa fe chicken avacado melt

2tablespoonsFreshly chopped cilantro leaves, divided
½tablespoonFreshly squeezed lime juice
Salt to taste
Pepper to taste
2slicesSourdough bread, lightly toasted (thick slices)
2Cooked skinless, boneless chicken breast halves
1Tomato, sliced
1Avacado, peeled and sliced
3ouncesSliced LORRAINE cheese

Directions

Combine mayonnaise, 1-½ tablespoons cilantro, lime juice, salt and pepper. Spread on top of bread. Place chicken breast on bread. Layer tomatoes, avacado and Lorraine cheese. Broil sandwich until cheese melts. Sprinkle with remaining cilantro.
