Salsa alla marinara (mariner's sauce)

3tablespoonsGarlic cloves, minced
¼cupMinced parsley
½cupOlive oil
2cupsChopped, peeled tomatoes
1teaspoonCrumbled, dried oregano
Salt and pepper to taste

Directions

Saute garlic and parsley in oil. When garlic is delicately brown, add tomatoes, oregano, salt and pepper. Simmer for 30 minutes, or until well-blended and thick. Makes about 1½ cups.
