Salmon croquettes or patties

Yield: 3 Servings

Measure Ingredient
1½ cup Salmon (15 1/2oz)firmly
\N \N Packed, minced
¼ cup Cracker crumbs
¼ teaspoon Salt
2 \N Eggs, unbeaten
1 \N Egg slightly beaten
\N \N Cracker crumbs
1 cup Canned peas, drained
2 cups White sauce, medium thick or
\N \N Cheese sauce
\N \N Salt and pepper to taste

Combine first 4 ingredients and mix well with fork. Shape into 6 uniform croquettes , dip in beaten egg, and roll in cracker crumbs.

Fry in deep fat (360-375F) until golden brown, about 10 minutes. Add peas to hot sauce, season to suit taste, and pour around the croquettes.

From label of Monarch Pink Salmon Can Typed by Bobbie Beers NOTE: I usually make patties. Then you don't have to deep-fry. Just put a little oil in a skillet and fry until golden brown. We also put worcestershire sauce on them when I serve them without the sauce and peas. Delicious on crackers too!
