Salmon croquettes #3

Yield: 4 Servings

Measure Ingredient
1 can (1-lb) salmon; drained
½ teaspoon Salt
1 dash Cayenne pepper
1 tablespoon Chopped parsley
¼ cup Cracker crumbs
½ teaspoon Grated onion
1 \N Egg; beaten
1 cup Bread crumbs
1 \N Egg; beaten

Finely mince fish. Add salt, pepper, parsley, cracker crumhs, onion and egg. Mix well. Roll in cones. Dip these into beaten egg, roll in bread crumbs. Drop into deep hot fat and fry until light brown. Drain on paper towels. Serve immediately with your favorite tartar sauce. Yield: 4 servings.
