Salmon burgers

Ingredients

2cansSalmon; drained, 15 oz ea.
2Eggs; beaten
1cupBreadcrumbs; dry, divided
Hot salad oil
8Hamburger buns
8Tomato slices
Lettuce

Directions

Combine salmon, eggs, and ½ cup breadcrumbs; mix well, and shape into 8 patties. Coat both sides of patties with remaining breadcrumbs; slowly cook in hot oil until golden brown. Serve on warm hamburger buns with tomato slices and lettuce.
