Salad with rice noodles

Yield: 4 Servings

Measure Ingredient
1 Head lettuce
Chopped green onions (no amount given; I used 1 bunch) (up to)
4 Boneless; skinless chicken breasts grilled or broiled (up to)
4 tablespoons Poppy seeds (I used 2 tablespoons)
Chinese rice noodles (chow mein noodles also work)
½ cup Oil
4 tablespoons Red wine vinegar (up to)
4 tablespoons Sugar (I used 3)
½ teaspoon Salt
¼ teaspoon Pepper

DRESSING

Date: Thu, 18 Jul 1996 08:43:08 -0400 Make dressing ahead, shake well and chill.

Mix salad ingredients together except noodles, add those just before serving.

Shake dressing again just before pouring over salad then mix it in so everything is coated.

NOTE: It doesn't look like enough dressing for all that salad, but it is and tastes great. Hope you enjoy it.
