Rice noodle (bifun) or bean noodle (vermicelli) salad

1cupRed Cabbage - shredded
180gramsSnow peas- blanched & shredded
1Red pepper - diced
90gramsSprouts - radish
Ginger - to taste
2Cloves Garlic
4Strips Orange zest
Coriander 15 sprigs stem removed
1Spring onion; (1 to 2)
7tablespoonsRed wine vinegar
¼cupToasted sesame oil
1tablespoonMaple syrup - optional
1teaspoonChili sauce
1teaspoonSeasalt
Tamari to taste

Directions

Place Bifun in a large bowl and pour boiling water to cover. Cover with plate and let sit until soft, about 10 minutes. Drain thoroughly and place in salad bowl. Toss in the cabbage, snow peas, pepper and sprouts.

In a food processor, prepare the dressing by blending all of the remaining ingredients except Tamari.

Pour the dressing over the noodles and toss. Add Tamari to taste.
