Chicken rice salad

Measure Ingredient
1 pack Uncle Ben's Fast Cooking Rice Pilaf
2 quarts Water
2 quarts Cooked chicken, diced
1 quart Mayonnaise
¼ cup Lemon juice
2 cups Green peppers, chopped
2 cups Tomatoes, fresh, chopped

1. Combine rice, contents of seasoning packet and water in cooking pan. 2. Bring to a vigours boil. Reduce heat, cover and simmer until water is

absorbed, about 5 minutes. 3. Cool slightly. 4. Add diced chicken.

5. Combine mayonnaise and lemon juice. Stir into rice. 6. Cover and chill. 7. Fold in green peppers and remaining ingredients just prior to serving.
