Roman potato salad

Yield: 4 servings

Measure Ingredient
4 ounces Lean cooked ham or prosciutto, julienned
2 mediums Potatoes, cooked, peeled julienned
4 ounces Emmenthaler, Jarlsberg or Gruyere cheese, julienned
1 medium Sized tart green apple, peeled, cored, julienned
1 small Red onion, finely sliced
½ cup Home made mayonnaise
\N \N Salt and pepper

Combine the ham, potatoes, cheese, apple and onion in a bowl, add the mayonnaise, salt and pepper, toss gently but thoroughly. Adjust seasoning, serve chilled.
