Roasted rock shrimp with two chilies

Ingredients

1tablespoonChipotle chiles finely chopped (canned or bottled)
1Anaheim or New Mexico green chile trimmed, seeded, sliced
2Garlic clove(s), minced
1tablespoonGinger, minced or grated
1tablespoonLemon or lime juice
poundsShrimp

Directions

Preheat oven to 400F. In a large bowl, combine the chile pepper, garlic, ginger and lemon juice. Stir to mix, then add the shrimp and stir until the shrimp are evenly coated. Let sit for 5 minutes.

Pour the shrimp mixture into a shallow baking dish and roast the shrimp until they are just opaque through, 8-12 minutes.

Spoon onto individual plates, with rice alongside, if desired.
