Red snapper in foil

Ingredients

4poundsRed snapper, cleaned and boned
2tablespoonsCorn oil Salt and pepper to taste
¼cupButter
½cupChopped celery
¼cupFinely chopped green pepper
2Scallions, chopped
1cupBread crumbs
2tablespoonsChopped parsley
¼cupCoarsley chopped toasted almonds
1largeTomato, skinned and sliced
6Thin slices onion
6Thin slices orange
6Thin slices lime
½Lime, juice of

Directions

Preheat broiler. Rub fish lightly with corn oil. Sprinkle inside and out with salt and pepper. Saute celery, green pepper and scallions 3 minutes. Add bread crumbs, parsley and almonds. Press mixture together, then stuff fish. Fasten closed with toothpicks. Brush a large sheet of aluminum foil lightly with oil; palce fish on it and arrange tomato, onion, orange and lime slices down the length of the fish, overlapping. Seal foil tightly and cook 30-40 minutes.
