Red snapper in foil

| 2 | tablespoons | Corn oil Salt and pepper to taste | 
| ¼ | cup | Butter | 
| ½ | cup | Chopped celery | 
| ¼ | cup | Finely chopped green pepper | 
| 2 | Scallions, chopped | |
| 1 | cup | Bread crumbs | 
| 2 | tablespoons | Chopped parsley | 
| ¼ | cup | Coarsley chopped toasted almonds | 
| 1 | large | Tomato, skinned and sliced | 
| 6 | Thin slices onion | |
| 6 | Thin slices orange | |
| 6 | Thin slices lime | |
| ½ | Lime, juice of | |
Directions
Preheat broiler. Rub fish lightly with corn oil. Sprinkle inside and out with salt and pepper. Saute celery, green pepper and scallions 3 minutes. Add bread crumbs, parsley and almonds. Press mixture together, then stuff fish. Fasten closed with toothpicks. Brush a large sheet of aluminum foil lightly with oil; palce fish on it and arrange tomato, onion, orange and lime slices down the length of the fish, overlapping. Seal foil tightly and cook 30-40 minutes.
