Red rice salad

2Chillies; finely sliced
2Mini pitta breads; finely chopped
3tablespoonsOlive oil
1Handful radish leaves; rinsed and roughly
; chopped
1Lime
1Lemon
Salt & pepper

Directions

1 Fill a third of a pressure cooker with boiling water. Pour in the rice and cook on full for 15-18 minutes.

2 When the red button pops up on the pressure cooker, release the steam.

Drain the rice and mix it in a bowl with the chillies and pitta bread.

3 Add the olive oil, radish leaves and the zest and juice of the lemon and lime. Season to taste.
