Red pepper pasta sauce^

Ingredients

Quantity Ingredient
3 cups Chopped red bell pepper
1 clove Galric, minced
1 cup Chicken broth
1 tablespoon Tomato paste
¼ teaspoon Salt
dash Hot pepper sauce
1 tablespoon To 2 chopped fresh basil

Directions

Bring all to a boil; reduce heat and simmer until slightly thickened, about 20 minutes. Process in blender or processor until smooth. Serve over hot cooked pasta. Garnish with additional basil, if desired.

Microwave directions:

Microwave covered, the pepper, onion and garlic 4-4½ minutes until vegetables are tender. Add ½ cup chicken broth, tomato paste, salt and hot pepper sauce. Cook, uncovered, on high 2-3 minutes. Continue as above.

35 cal., 2g pro., 6g carb., 1g fiber, 1g/26% fat, 360mg sodium, 240mg potassium, 1 vegetable exchange.
