Rancho mashed potatoes

Yield: 8 Servings

Measure Ingredient
9 \N Peeled medium potatoes
1 \N Clove garlic
¼ cup Melted butter or margarine
2 \N Egg yolks
½ cup Heavy cream
½ teaspoon Salt
¼ teaspoon Pepper
4 ounces Can sliced mushrooms
2 tablespoons Butter or margarine
¼ cup Chopped parsley

Mash potatoes with butter (¼ cup). Blend in yolks, cream, salt, and pepper. Cook mushroooms in 2 T butter - add with parsley to potatoes and mix. Place in a 3 quart casserole oven dish and bake at 375 F for35 minutes. 8 servings.
