Pulikkaachal (tamarind chutney)

Yield: 6 Servings

Measure Ingredient
An orange-sized tamarind ball
1 tablespoon Jaggery; powdered
1 teaspoon Turmeric
12 Green chiles; chopped
4 Sprigs curry leaves; chopped
1 4" piece ginger; chopped
Salt; to taste -For Seasoning---
1 teaspoon Black mustard seeds
1 teaspoon Black gram dal
3 Red chiles; broken
4 tablespoons Oil

Extract juice from tamarind. Heat oil and add mustard seeds, black gram dal and red chilies. When brown, add green chilies and curry leaves and fry for a couple of minutes. Now add tamarind juice, jaggery, turmeric, salt and ginger. Cook till mixture is thick.
