QuantityIngredient
4cupsFlour
½teaspoonBaking soda
1teaspoonBaking powder
1teaspoonSalt
¾cupMargarine
2Eggs
½cupMilk
cupPrune jam; (or thick filling of choice) (up to 2)

Directions

Preheat the oven to 375 degrees. In a large bowl, sift together the flour, baking soda, baking powder and salt. Cut in the margarine using a pastry blender or knives. Add eggs and milk; mix thoroughly to form a dough.

Divide the dough into quarters. On a lightly floured work surface, roll out each quarter of dough to about a 10-by-10 inch square ⅛ inch to ¼ inch thick. Cut dough into about sixteen 2½-by-2 ½-inch squares. Place 1 scant teaspoon of the prune jam or other thick filling in the center of each square. Bring the 4 corners together and pinch to seal.

Brush the Prune Pillows with the egg/water mixture. Place on a greased baking sheet and bake for 10 to 15 minutes or until brown.

Remove from the oven and cool on a wire rack. When cool, sprinkle with powdered sugar.
