Potatoes duchesse #2

Yield: 1 Servings

Measure Ingredient
6 mediums Potatoes; boiled until tender
¼ cup Butter or margarine
2 \N Beaten egg yolks
\N \N Salt and white pepper
\N \N Nutmeg

Preheat oven 400 degrees . Pass potatoes through a food mill or ricer. Add butter, seasonings, and egg yolks while potatoes are hot. Put the mixture in a pastry bag with a star tube. Squeeze out onto cookie sheet into desired shapes. You may brush lightly with egg wash for greater browning.

Bake 20-25 minutes until golden brown. Serve at once.
