Potatoes duchesse

Yield: 4 Servings

Measure Ingredient
4 \N Whole potatoes
½ cup Hot milk
2 tablespoons Butter -- melted
1 teaspoon Salt
¼ teaspoon Black pepper
¼ teaspoon Nutmeg
2 \N Eggs
2 \N Egg yolks

Boil potatoes until tender. Mash with ¼ cup milk, butter, salt, pepper, and nutmeg. Beat eggs and egg yolks together, then beat in remaining milk.

Beat egg mixture into potatoes until fluffy. Serve at once.
