3Cloves garlic -- minced
cupWater or chicken broth
2teaspoonsFresh thyme -- chopped
Salt and pepper

Directions

Cut potatoes into ¾" pieces. Heat oil in skillet. Add potatoes and stir-fry for 1 minute. Pour in water or broth, cover and cook over low heat 4 to 5 minutes. Add garlic, zucchini, thyme and season with salt and pepper to taste. Stir, re-cover and cook until vegetables are tender. 96 calories and 2 grams fat.
