Potatoes & zucchini

Measure Ingredient
3 mediums Potatoes -- scrubbed
2 mediums Zucchini -- trimmed and
\N \N Cubed
2 teaspoons Oil
3 \N Cloves garlic -- minced
⅓ cup Water or chicken broth
2 teaspoons Fresh thyme -- chopped
\N \N Salt and pepper

Cut potatoes into ¾" pieces. Heat oil in skillet. Add potatoes and stir-fry for 1 minute. Pour in water or broth, cover and cook over low heat 4 to 5 minutes. Add garlic, zucchini, thyme and season with salt and pepper to taste. Stir, re-cover and cook until vegetables are tender. 96 calories and 2 grams fat.
