Zucchini-potato pancakes

Yield: 15 Servings

Measure Ingredient
\N 3 Eggs -- Lightly Beaten

4 md Zucchini -- Coarsely Grated 2 Lg Potatoes -- Cooked And

: Mashed

½ c Wheat Germ

½ c Matzo Meal Or Saltine

: Cracker Crumbs

¼ ts Each

: Salt And Pepper

Combine all ingredients adding more salt if needed. Cook on hot oiled griddle until brown on both sides (4 minutes for each side). These are especially good for brunch served with sour cream and tart jam and perhaps crisp link sausages. Makes 15 large pancakes. These can also be made smaller and served as appetizers.
