Pork roast salsa

Ingredients

| 2 | tablespoons | Red bell pepper; diced |
| 3 | Green onions; sliced fine lengthwise | |
| ¼ | teaspoon | Ground ginger |
| 1 | ounce | Lemon juice |
| 1 | ounce | Tequila |
| 1 | tablespoon | Fresh mint leaves; chopped |
Directions
Cut pineapple rings into ¼-inch pieces. Mix with all other ingredients. Chill very well. Serve with pork roast.
Judi's Notes: This tastes so much better with fresh pineapple. I added a fresh peach to it and it turned out very well.
