Pork roast salsa

1smallCan pineapple rings; drained
2tablespoonsRed bell pepper; diced
3Green onions; sliced fine lengthwise
¼teaspoonGround ginger
1ounceLemon juice
1ounceTequila
1tablespoonFresh mint leaves; chopped

Directions

Cut pineapple rings into ¼-inch pieces. Mix with all other ingredients. Chill very well. Serve with pork roast.

Judi's Notes: This tastes so much better with fresh pineapple. I added a fresh peach to it and it turned out very well.
