Pineapple salsa (hot, hot, hot!!!)

½cupVery ripe pineapple; corred and cut in 1/4-inch pieces
1teaspoonFresh lime juice
2tablespoonsRed pepper; minced finely
1tablespoonChili pepper; minced finely
1teaspoonMinced fresh cilantro
½teaspoonMinced fresh mint minced

Directions

I make this with 3 types of hot peppers; red, orange and green. This makes it really pretty and colorful. The hotter the better. Serve with taco chips. This can also be served with grilled scallops or baked ham sandwiches.
