Pineapple fritters

Ingredients

| 3 | cups | All-purpose flour |
| 2 | tablespoons | Baking powder |
| ½ | teaspoon | Salt |
| ¾ | cup | Sugar |
| 3 | Eggs; beaten | |
| 1 | cup | Milk |
| 1 | can | Crushed pineapple; drained (20-ounce) |
| Vegetable oil | ||
| Powdered sugar | ||
Directions
Combine first 4 ingredients; stir well. Add eggs, milk, and pineapple; stir until smooth. Heat 3 to 4 inches oil to 375°F; carefully drop batter by heaping tablespoonfuls into hot oil, cooking 5 to 6 fritters at a time.
Cook about 1 minute or until golden on one side; turn and cook other side about 1 minute. Drain well on paper towels; sprinkle with powdered sugar.
Yield: 3 dozen.
