Pineapple chicken stir-fry

Ingredients

8ouncesYour choice of stir-fry
Veggies
1tablespoonSesame oil
1teaspoonGinger
1Clove garlic [crushed]
1mediumRed pepper [cut into strips]
8ouncesPineapple chunks [drained]
Retain the juice
2tablespoonsSoy sauce
2tablespoonsCorn starch
2tablespoonsPineapple juice

Directions

1. Stir fry the chicken and the veggies in the oil, and add the ginger and the garlic. Cook for 5 min. then add the pineapple and the soy sauce... 2. Combine the cornstarch and the pineapple juice and add to the stir-fry, stir and cook for a few minutes `til sauce thickens... 3. Serve over hot cooked rice or noodles...
