Pineapple chicken stir-fry

Ingredients

| 1 | pounds | Chicken breasts [boneless skinless 1\" cubed] |
| 8 | ounces | Your choice of stir-fry |
| Veggies | ||
| 1 | tablespoon | Sesame oil |
| 1 | teaspoon | Ginger |
| 1 | Clove garlic [crushed] | |
| 1 | medium | Red pepper [cut into strips] |
| 8 | ounces | Pineapple chunks [drained] |
| Retain the juice | ||
| 2 | tablespoons | Soy sauce |
| 2 | tablespoons | Corn starch |
| 2 | tablespoons | Pineapple juice |
Directions
1. Stir fry the chicken and the veggies in the oil, and add the ginger and the garlic. Cook for 5 min. then add the pineapple and the soy sauce... 2. Combine the cornstarch and the pineapple juice and add to the stir-fry, stir and cook for a few minutes `til sauce thickens... 3. Serve over hot cooked rice or noodles...
