Stir-fry chicken with pineapple

Measure Ingredient
500 grams Chicken breast
1 \N Pineapple; ripe
1 \N 4 inch piece ginger
2 \N Cloves garlic
5 \N Stalks coriander
1 \N Chilli
5 \N Spring onions
1 teaspoon Sugar
1 teaspoon Pepper
2 tablespoons Soya sauce
2 tablespoons Fish sauce
2 tablespoons Oil

Remove the skin of the pineapple and cut into cubes and place in a bowl.

Cut the chicken into slices across the grain. Slice the ginger and the chilli into match sticks.

Chop the garlic and slice the spring onion.

Heat the oil in a wok and add the ginger, garlic and chicken. Stir for 2 minutes and add the pineapple. Continue to stir for eight minutes adding the soy sauce, fish sauce, sugar, pepper and chilli. Remove and garnish with spring onion and coriander.
