Pimento-onion relish

½teaspoonFine herbs

1canWhole pimentos, quartered (4 oz.)
1mediumVidalia onion, thinly sliced (about 1 cup)

Directions

Combine vinegar, fine herbs, sugar and water. Add pimentos and onion; marinate overnight. Drain; serve with meat.
