Peachy scotch pie

Ingredients

cupBrown sugar
3tablespoonsFlour
½teaspoonSalt
¼cupButter
1tablespoonLemon juice
¼teaspoonVanilla extract or almond extract
1canPeach slices (1 lb. 13 oz.); drained

Directions

In saucepan, combine sugar, flour, salt, butter, lemon juice and extract; mix well. Bring to rolling boil, over medium heat, stirring constantly.

Boil 1 minute, stir in peach slices. Pour into 9 inch pie shell. Top with lattice crust. Bake at 400 degrees for 40 to 45 minutes.
