Peachy scotch pie

Yield: 8 Servings

Measure Ingredient
⅔ cup Brown sugar
3 tablespoons Flour
½ teaspoon Salt
¼ cup Butter
1 tablespoon Lemon juice
¼ teaspoon Vanilla extract or almond extract
1 can Peach slices (1 lb. 13 oz.); drained

In saucepan, combine sugar, flour, salt, butter, lemon juice and extract; mix well. Bring to rolling boil, over medium heat, stirring constantly.

Boil 1 minute, stir in peach slices. Pour into 9 inch pie shell. Top with lattice crust. Bake at 400 degrees for 40 to 45 minutes.
