Passover meat latkes

Yield: 4 - 6

Measure Ingredient
2 cups Mashed Potatoes
¼ cup Matzo cake meal
2 Eggs beaten
Salt and pepper to taste
1 cup Ground leftover meat
Schmaltz (Oil) for frying

Source: Love & Knishes, by, Sara Kasdan Combine first 4 ingredients and shape into 1½ inch balls. Scoop a hole in the centre of each ball and fill with ground meat. Press the potato mixture over the opening and flatten the balls slightly. Fry in a generous amount of hot fat (Oil) until lightly browned. Drain on Paper towels.
