The following recipes appeared last year in the N.Y.Daily News. The first is a recipe from Elaine Kasdan, a good home cook from N.J. It has no fat except that in the wheat germ.
Pre-heat oven to 425 degrees. Lightly spray 2 large cookie sheets with nonstick spray. Combine all ingredients and mix well. Drop ¼ cupfuls of batter onto prepared pans and press down. Bake 15 minutes. Turn and bake 10 more minutes or until crisp. Serve. Makes 12 latkes.
