Rice latkes

Ingredients

| 2 | cups | Brown or white rice, cooked |
| 2 | Eggs, well beaten | |
| 3 | tablespoons | Wheat germ or whole wheat flour |
| 2 | tablespoons | Sugar |
| Generous pinch of cinnamon | ||
| Oil, for frying | ||
Directions
Combine all ingredients, mixing thoroughly. Drop by tablespoonful into hot oil and fry on both sides until golden brown. Yields 8-12 latkes.
