Yield: 1 Servings
|2 cups||Brown or white rice, cooked|
|2||Eggs, well beaten|
|3 tablespoons||Wheat germ or whole wheat flour|
|Generous pinch of cinnamon|
|Oil, for frying|
Combine all ingredients, mixing thoroughly. Drop by tablespoonful into hot oil and fry on both sides until golden brown. Yields 8-12 latkes.
