Rice latkes

Yield: 1 Servings

Measure Ingredient
2 cups Brown or white rice, cooked
2 Eggs, well beaten
3 tablespoons Wheat germ or whole wheat flour
2 tablespoons Sugar
Generous pinch of cinnamon
Oil, for frying

Combine all ingredients, mixing thoroughly. Drop by tablespoonful into hot oil and fry on both sides until golden brown. Yields 8-12 latkes.
