Passover crustless quiche

Ingredients

| 2 | Eggs | |
| 1 | small | Onion; (grated) |
| ½ | cup | Mayonnaise |
| ½ | cup | Milk |
| 3 | tablespoons | Cake meal; (heaping) |
| 8 | ounces | Swiss cheese; (shredded) |
| 1 | pack | Frozen chopped spinach; (cooked & drained) |
| Salt and pepper; (to taste) | ||
Directions
Combine first 4 ingredients, mix in cake meal, cheese & spinach, season to taste with salt & pepper. Bake in 2 eight inch pie pans @ 350º for 30 minutes or until top is golden brown.
NOTES : Can make until the point of baking in the morning and bake later if you wish. Freezes well)
