Passover crustless quiche

Yield: 1 Servings

Measure Ingredient
2 \N Eggs
1 small Onion; (grated)
½ cup Mayonnaise
½ cup Milk
3 tablespoons Cake meal; (heaping)
8 ounces Swiss cheese; (shredded)
1 pack Frozen chopped spinach; (cooked & drained)
\N \N Salt and pepper; (to taste)

Combine first 4 ingredients, mix in cake meal, cheese & spinach, season to taste with salt & pepper. Bake in 2 eight inch pie pans @ 350º for 30 minutes or until top is golden brown.

NOTES : Can make until the point of baking in the morning and bake later if you wish. Freezes well)
