Passover crustless quiche

Ingredients

2Eggs
1smallOnion; (grated)
½cupMayonnaise
½cupMilk
3tablespoonsCake meal; (heaping)
8ouncesSwiss cheese; (shredded)
1packFrozen chopped spinach; (cooked & drained)
Salt and pepper; (to taste)

Directions

Combine first 4 ingredients, mix in cake meal, cheese & spinach, season to taste with salt & pepper. Bake in 2 eight inch pie pans @ 350º for 30 minutes or until top is golden brown.

NOTES : Can make until the point of baking in the morning and bake later if you wish. Freezes well)
