Crustless zucchini quiche

Yield: 6 Servings

Measure Ingredient
3 cups Zucchini; grated
½ cup Bread crumbs
¾ cup Mozzarella cheese; part skim milk, grated
2 Eggs
4 Egg whites
1 teaspoon Minced onions
Salt and pepper

Mix all but cheese. Put into greased pie pan and bake ½ hour at 350F. Top with cheese and bake ½ hour more.
