Yield: 8 servings
|1 pack||Unflavored gelatin 1/4 oz|
|2 tablespoons||PLUS 1/4 cup water|
|1 pack||3 3/8 oz pkg instant vanilla pudding|
|1½ cup||Non-fat milk|
|⅓ cup||Freshly squeezed lime juice|
|1 cup||Frozen light whipped topping defrosted|
|2 teaspoons||Lime zest|
|1 \N||Ready-made chocolate pie crust|
In a small bowl, sprinkle gelatin over 2 tablespoons cool water.
Allow to soften 5 minutes. Boil ¼ cup water and pour over gelatin, stirring until gelatin is dissolved. Place in refrigerator until cool, about 10 minutes.
Meanwhile, place pudding mix in large bowl. With electric beaters, mix in milk and lime juice, then whipped topping and lime zest. Set aside until gelatin is cool.
With beaters again, combine gelatin mixture with pudding mixture.
Pour into crust and chill several hours or overnight.
