Pantry chocolate lime pie

Yield: 8 servings

Measure Ingredient
1 pack Unflavored gelatin 1/4 oz
2 tablespoons PLUS 1/4 cup water
1 pack 3 3/8 oz pkg instant vanilla pudding
1½ cup Non-fat milk
⅓ cup Freshly squeezed lime juice
1 cup Frozen light whipped topping defrosted
2 teaspoons Lime zest
1 \N Ready-made chocolate pie crust

In a small bowl, sprinkle gelatin over 2 tablespoons cool water.

Allow to soften 5 minutes. Boil ¼ cup water and pour over gelatin, stirring until gelatin is dissolved. Place in refrigerator until cool, about 10 minutes.

Meanwhile, place pudding mix in large bowl. With electric beaters, mix in milk and lime juice, then whipped topping and lime zest. Set aside until gelatin is cool.

With beaters again, combine gelatin mixture with pudding mixture.

Pour into crust and chill several hours or overnight.

Approximate values per serving: 194 calories; 1g fat; 1 mg cholesterol; 301 mg sodium; ½ percent calories from fat.
