Pak choi, ginger and oyster sauce

2 tablespoons Vegetable oil
1 \N 2 1/2 cm pie peeled root ginger; cut into julienne
3 \N Heads pak choi; halved lengthways
100 millilitres Thai oyster sauce or use watered-down
\N \N ; chinese oyster sauce

1 Steam pak choi for 5-8 minutes until just tender. Heat a wok, add the oil and ginger and stir fry for a minute. Add the pak choi and cook for 30 seconds. Pour on the oyster sauce and toss together.
