Oysters casino

Yield: 4 servings

Measure Ingredient
24 \N Oysters on the half shell
4 slices Bacon, cut into 24 squares
½ cup Butter
⅓ cup Finely chopped shallots
¼ cup Finely chopped parsley
¼ cup Finely chopped green pepper
¼ cup Finely chopped celery
¼ teaspoon Fresh ground pepper
¼ teaspoon Hot sauce
\N \N Juice of 1 lemon

If shallots are unavailable substitute, scallions and add a small clove of garlic. Omit the green pepper if desired. Pre heat oven to 450 deg F. Cut the bacon into 24 small squares and pan fry until partially cooked. Cream together the butter and all the seasonings.

Put a spoonful of butter mixture on each oyster and top with a square of partly cooked bacon. Place the oysters in a heavy pan and bake until butter is bubbling and bacon crisp- 5 to 8 min. Serve with lemon wedges, hot sauce and a pepper mill to pass around.
