Orzo casserole

Yield: 10 servings

Measure Ingredient
2 tablespoons Butter or margarine
1 each Garlic clove; minced
1½ cup Orzo OR Rosa Marina pasta
1 ounce Onion soup mix (1 envelope)
3¼ cup Water
12 ounces Mushrooms; sliced (about 4c)
¼ cup Parsley, fresh; chopped

In a large saucepan, melt butter over medium heat; add garlic and pasta and cook, stirring constantly, for about 2½ minutes or until golden. In a large bowl, combine onion soup mix with the water; add to pasta mixture. Bring to a boil, then reduce heat and simmer, covered, for 10 minutes. Add mushrooms (do not stir); simmer, covered for 10 minutes more. Stir in parsley. Place mixture in a serving bowl or casserole dish and let stand fo 10 minutes or until liquid is absorbed. Serve.
