Orzo casserole

Ingredients

| 2 | tablespoons | Butter or margarine |
| 1 | each | Garlic clove; minced |
| 1½ | cup | Orzo OR Rosa Marina pasta |
| 1 | ounce | Onion soup mix (1 envelope) |
| 3¼ | cup | Water |
| 12 | ounces | Mushrooms; sliced (about 4c) |
| ¼ | cup | Parsley, fresh; chopped |
Directions
In a large saucepan, melt butter over medium heat; add garlic and pasta and cook, stirring constantly, for about 2½ minutes or until golden. In a large bowl, combine onion soup mix with the water; add to pasta mixture. Bring to a boil, then reduce heat and simmer, covered, for 10 minutes. Add mushrooms (do not stir); simmer, covered for 10 minutes more. Stir in parsley. Place mixture in a serving bowl or casserole dish and let stand fo 10 minutes or until liquid is absorbed. Serve.
