Orzo with spinach and feta cheese

Ingredients

1 | cup | Orzo pasta |
1¼ | teaspoon | Olive oil |
¾ | medium | Onion; minced |
7 | ounces | Frozen chopped spinach; thawed and well drained |
2 | tablespoons | Feta cheese; plus 2 tsp. ,crumbled |
Freshly ground black pepper; to taste |
Directions
Cook the orzo according to package directions. Drain. Heat the oil in a skillet over medium high heat. Add the onion and saut for 5 minutes. Add the spinach and saut for 4 more minutes. Toss the onion spinach mixture with the hot orzo. Add the feta cheese and ground pepper and toss well.
Serve immediately.
