Orzo with spinach and feta cheese

Ingredients

Quantity Ingredient
1 cup Orzo pasta
teaspoon Olive oil
¾ medium Onion; minced
7 ounces Frozen chopped spinach; thawed and well drained
2 tablespoons Feta cheese; plus 2 tsp. ,crumbled
Freshly ground black pepper; to taste

Directions

Cook the orzo according to package directions. Drain. Heat the oil in a skillet over medium high heat. Add the onion and saut‚ for 5 minutes. Add the spinach and saut‚ for 4 more minutes. Toss the onion spinach mixture with the hot orzo. Add the feta cheese and ground pepper and toss well.

Serve immediately.
