Orange harvard beets

Measure Ingredient
14 ounces Beets
\N \N Zest and juice of 1/2 orange
1 tablespoon Cornstarch
2 tablespoons To 3 tb EQUAL, sugar substitute

Drain liquid from beets into saucepan. Stir in orange zest. Bring to a boil. Simmer until reduced to ⅓ cup. Whisk cornstarch into orange juice and stir into beet juice; cook, stirring constantly until clear and thickened. Add beets. Stir, over medium heat, until heated through and coated with sauce. Remove from heat; stir in Equal. Makes 1-⅓ cups.

PER ⅓ CUP SERVING: 53 calories, 1⅒ g protein, ⅒ g fat, 12⅗ carbohydrate.
