Orange chicken with rice

Measure Ingredient
2 \N Boneless; skinless chicken breasts
2 tablespoons Cooking oil
1½ cup Sliced fresh mushrooms
1½ cup Frozen crinkle-cut carrots
1½ cup Water
¾ cup Long-grain rice
½ can (6 oz) frozen orange juice concentrate
¼ cup Soy sauce
⅛ teaspoon Garlic powder
⅛ teaspoon Pepper

Cut chicken into 1-inch pieces. In a large skillet, cook chicken in hot oil till no longer pink, stirring constantly. Stir in mushrooms, carrots, water, rice, orange juice concentrate, soy sauce, garlic powder, and pepper. Bring to boiling. Turn mixture into a 2 qt. casserole dish. Bake, covered, in a 350 degree oven about 35 minutes, or till rice is tender.
