2 | teaspoons | Baking powder; (10 g) |
60 | grams | Brown sugar |
1 | teaspoon | Cinnamon powder; (5 g) |
120 | grams | Walnuts; chopped |
340 | grams | Seedless dates |
60 | grams | Butter |
50 | millilitres | Milk |
Orange juice for binding | ||
1 | teaspoon | Vanilla essence; (5 ml) |
Directions
MIX flour, baking powder, brown sugar, cinnamon powder and walnuts together. In a separate bowl, mix dates, butter and milk. Fold together the flour mixture and the date mixture, adding enough orange juice to give it a soft consistency. Add vanilla essence and mix well. Pour the batter into a well greased cake tin. Bake in a pre-heated oven at 160o C/ 325o F for one hour 15 minutes or until a skewer inserted in the centre comes out clean.
