Orange, date and walnut cake

340 grams Wholemeal; (wheat) flour
2 teaspoons Baking powder; (10 g)
60 grams Brown sugar
1 teaspoon Cinnamon powder; (5 g)
120 grams Walnuts; chopped
340 grams Seedless dates
60 grams Butter
50 millilitres Milk
Orange juice for binding
1 teaspoon Vanilla essence; (5 ml)

Directions

MIX flour, baking powder, brown sugar, cinnamon powder and walnuts together. In a separate bowl, mix dates, butter and milk. Fold together the flour mixture and the date mixture, adding enough orange juice to give it a soft consistency. Add vanilla essence and mix well. Pour the batter into a well greased cake tin. Bake in a pre-heated oven at 160o C/ 325o F for one hour 15 minutes or until a skewer inserted in the centre comes out clean.
