Onion-mushroom-bacon pie

Yield: 6 Servings

Measure Ingredient
1 pounds Mushrooms; sliced
6 slices Bacon; diced
½ medium Onion; sliced
2 Cloves garlic; minced
2 tablespoons Chopped parsley
3 tablespoons Olive oil
4 Eggs; beaten
1 cup Parmesan cheese
½ teaspoon Salt
¼ teaspoon Pepper
1 (9 inch) pie shell; unbaked

Saut‚ mushrooms, bacon, onion, garlic and parsley in olive oil until tender. Drain well and cool. Combine eggs, cheese and seasonings. Stir into onion-bacon mixture. Pour into pie shell and bake for 30 minutes at 350ø.

Yield: 6 to 8 servings.
