Onion-mushroom-bacon pie

Ingredients

| 1 | pounds | Mushrooms; sliced |
| 6 | slices | Bacon; diced |
| ½ | medium | Onion; sliced |
| 2 | Cloves garlic; minced | |
| 2 | tablespoons | Chopped parsley |
| 3 | tablespoons | Olive oil |
| 4 | Eggs; beaten | |
| 1 | cup | Parmesan cheese |
| ½ | teaspoon | Salt |
| ¼ | teaspoon | Pepper |
| 1 | (9 inch) pie shell; unbaked | |
Directions
Saut mushrooms, bacon, onion, garlic and parsley in olive oil until tender. Drain well and cool. Combine eggs, cheese and seasonings. Stir into onion-bacon mixture. Pour into pie shell and bake for 30 minutes at 350ø.
Yield: 6 to 8 servings.
