Olive pesto - house beautiful

Yield: 1 cup

Measure Ingredient
¾ cup Black or green Nicoise olives, pitted
½ cup Packed fresh flat-leaf parsley sprigs
¼ cup Packed fresh basil leaves
2 \N Shallots or green onions (white part only), chopped
2 tablespoons Walnuts or pistachios
2 \N Garlic cloves, peeled and crushed
3 tablespoons Extra-virgin olive oil
¼ cup Freshly grated Parmesan cheese, preferably Reggiano

In a blender or food processor, place the olives, parsley, basil, shallots, nuts, and garlic. Process until finely minced. Add oil and cheese and process until blended. Transfer to a small bowl, cover and refrigerate. Makes about 1 C.
