Olive pesto - house beautiful

Ingredients

| ¾ | cup | Black or green Nicoise olives, pitted |
| ½ | cup | Packed fresh flat-leaf parsley sprigs |
| ¼ | cup | Packed fresh basil leaves |
| 2 | Shallots or green onions (white part only), chopped | |
| 2 | tablespoons | Walnuts or pistachios |
| 2 | Garlic cloves, peeled and crushed | |
| 3 | tablespoons | Extra-virgin olive oil |
| ¼ | cup | Freshly grated Parmesan cheese, preferably Reggiano |
Directions
In a blender or food processor, place the olives, parsley, basil, shallots, nuts, and garlic. Process until finely minced. Add oil and cheese and process until blended. Transfer to a small bowl, cover and refrigerate. Makes about 1 C.
