Olive pesto - house beautiful

Ingredients

¾cupBlack or green Nicoise olives, pitted
½cupPacked fresh flat-leaf parsley sprigs
¼cupPacked fresh basil leaves
2Shallots or green onions (white part only), chopped
2tablespoonsWalnuts or pistachios
2Garlic cloves, peeled and crushed
3tablespoonsExtra-virgin olive oil
¼cupFreshly grated Parmesan cheese, preferably Reggiano

Directions

In a blender or food processor, place the olives, parsley, basil, shallots, nuts, and garlic. Process until finely minced. Add oil and cheese and process until blended. Transfer to a small bowl, cover and refrigerate. Makes about 1 C.
