Arugula pesto - house beautiful

| 1⅓ | cup | Packed fresh arugula leaves |
| ⅓ | cup | Packed fresh flat-leaf parsley sprigs |
| ⅓ | cup | Packed fresh spinach leaves |
| 2 | tablespoons | Walnuts or pistachios |
| 2 | larges | Garlic doves, peeled and crushed |
| 3 | tablespoons | Extra-virgin olive oil |
| 2 | tablespoons | Freshly grated Parmesan cheese, preferably Reggiano |
Directions
In a blender or food processor, place the arugula, parsley, spinach, nuts, and garlic. Process until finely minced. Add oil and cheese and process until blended. Transfer to a small bowl, cover and refrigerate. Makes about ¾ C. House Beautiful/July/94 Scanned & fixed by Di and Gary
