Okra and tomato

2 | quarts | Sliced fresh okra |
4 | Fresh tomatoes, peel, dice | |
1 | Med. green pepper, chopped | |
1 | Med. onion, chopped | |
5 | tablespoons | Olive oil |
Salt & pepper to taste |
Heat olive oil in lge. heavy skillet or pot and saute onion and green pepper until light brown. Add okra and tomatoes and season to taste with salt & pepper.
Cover and cook over low heat 30 to 40 min., stirring occasionally.
