|2 quarts||Sliced fresh okra|
|4||Fresh tomatoes, peel, dice|
|1||Med. green pepper, chopped|
|1||Med. onion, chopped|
|5 tablespoons||Olive oil|
|Salt & pepper to taste|
Heat olive oil in lge. heavy skillet or pot and saute onion and green pepper until light brown. Add okra and tomatoes and season to taste with salt & pepper.
Cover and cook over low heat 30 to 40 min., stirring occasionally.
