Okra and tomato

Yield: 6 Servings

Measure Ingredient
2 quarts Sliced fresh okra
4 Fresh tomatoes, peel, dice
1 Med. green pepper, chopped
1 Med. onion, chopped
5 tablespoons Olive oil
Salt & pepper to taste

Heat olive oil in lge. heavy skillet or pot and saute onion and green pepper until light brown. Add okra and tomatoes and season to taste with salt & pepper.

Cover and cook over low heat 30 to 40 min., stirring occasionally.
