1 | small | Onion; finely chopped |
1 | small | Green bell pepper; finely chopped |
1 | pounds | Okra; cut in 1\" slices |
2 | larges | Tomatoes; chopped |
1 | cup | Corn kernels |
½ | teaspoon | Oregano; crumbled |
Salt and pepper; to taste |
Directions
Melt the butter in a pan; add the onion and green bell pepper, and cook over medium heat for 3 to 4 minutes, stirring often. Add the okra slices and cook, stirring often, for 2 minutes. Add the tomatoes, corn, and oregano. Cover and simmer over low heat for 10 minutes. Season with salt and pepper to taste. Serve hot.
