Nutty couscous

1¾ | cup | Chicken broth |
1 | cup | Couscous |
⅓ | cup | Toasted walnuts; chopped |
2 | tablespoons | Finely diced red bell pepper |
1 | tablespoon | Minced Italian parsley |

Bring chicken broth to a boil in a small saucepan. Add remaining ingredients, and stir to blend. Cover and remove from heat. Let stand for 5 to 10 minutes or until all the liquid has been absorbed. Fluff with a fork before serving. Serves 4.
Comments: A wonderful last-minute side dish, couscous requires little attention and works well with a number of complementary ingredients such as tomato, peppers, herbs, pesto, etc. Couscous is semolina grain that has been rolled, dampened and coated with fine wheat flour.
