Nutty coleslaw salad

Yield: 6 servings

Measure Ingredient
½ small White cabbage; shredded
2 \N Carrots; grated
4 \N Celery sticks; chopped
1 \N Crisp desert apple; chopped
50 grams Stoned raisins; (2oz)
50 grams Roasted cashew nuts; (2oz)
½ \N Lemon; juice of
\N \N Salt and pepper
3 tablespoons Greek-style yogurt

Mix the vegetables, fruit and nuts in a large salad bowl.

Stir the lemon juice and salt and pepper into the yogurt then toss the salad in the dressing.

Cover and chill until required
